Janette's Chocolate Brownies recipe
Makes: 9-12 squares
150g unsalted butter
200g dark 70% chocolate chips (Cacao Barry 'Ocoa')
200g soft brown sugar
A spot of vanilla essence
40g plain flour, sifted
A pinch of salt
1 teaspoon of baking powder
150g mixed nuts

Over a very low heat, gently melt the butter and chocolate.
In a separate bowl, whisk the eggs, sugar and vanilla until light and fluffy, then gently stir the melted chocolate and butter mixture in.
Fold in the sifted flour, baking powder and salt. Stir in the nuts.
Pour into a 25x25cm oiled, lined baking tin. Bake at 180°C (160°C fan) for 45 mins or until a skewer comes out clean.
Once cold, dust with icing sugar and cut into squares. Do not expect to keep these for long - they are simply scrumptious!
